I couldn't find a saffron bun recipe for the bread machine so I adapted my own!
Here it is!
1/4 to 1/2 tsp saffron - crushed to dust with mortor and pestle
Milk 100 g
Butter 25g
yeast 1/2 tsp
strong bread flour 250g
sugar 1 tsp
salt 1/2 tsp
egg 1
Bring milk to scalding/simmering point. Turn off, remove from heat. Add saffron. Add butter. When cool add to other ingredients - I added it at the end so there was traditional layering according to the bread machine's insructions (yeast, flour, sugar, etc so the yeast and salt are as far apart as possible)!
On my Panasonic the Enriched Bread Dough or white basic dough setting is 16. It takes 2 hr and 20 min!
After that I either put it in the fridge or shape it into rolls. For St Lucia's Day we would do S's and butterflies and L's. I did gumball-size rolls that puffed up to cream-puff size this time. Use oiled clingfilm to keep them from drying out whilst rising! I left them to rise for at least 6 hours!
Cook in the 170 C oven for 10 minutes for small or 15 minutes for larger rolls!
Enjoy!
